The beautiful Shun Premier line, which calls to mind the hand-forged knives of ancient Japan. While each knife still takes at least 100 handcrafted steps to complete, the materials Shun uses are among the most advanced in the industry. Each blade has a cutting core of Shun's proprietary VG-MAX “super steel” to take and hold a precision edge. The layered Damascus cladding supports the core and provides additional stain resistance. Near the edge of the blade, where the steels meet, an undulating line is formed—similar to the hamon formed when samurai swords are tempered using a traditional clay-baking technique. The hammered tsuchime finish acts like a series of hollow-ground cavities to reduce drag. The handles nestle comfortably in the hand, while the embossed end cap adds balance and beauty.
3-in. Vegetable Knife
The vegetable knife is one of the key variations of the paring knife. The Shun Premier Vegetable Knife is about the same size as a traditional paring knife, but it has a down-turned tip (sometimes known as "sheepsfoot") and a straight edge. The edge is especially convenient when cutting carrots or zucchini into disks directly into the cooking pot, as well as for smaller tasks such as trimming vegetables. Since the flat edge makes complete contact with the cutting surface, it also makes it easy to chop herbs and smaller vegetables on a chopping board.
4-in. Paring Knife
The paring knife is an indispensible kitchen prep knife. For peeling, trimming, making decorative cuts, or even for chopping small foods like shallots or garlic, the small size of the paring knife gives you complete cutting control. Since every kitchen needs a paring knife—and since you’ll use it just about every time you cook—it makes sense to own a paring knife you can love. May we suggest the Shun Premier Paring Knife? Of course, it’s beautiful. But its real beauty comes from how well it performs. A thin lightweight blade and a razor-sharp edge make every paring task a breeze. The contour on the bottom of the handle ensures an excellent grip whether held by the handle or in a pinch grip.
6.5-in. Utility Knife
This style of knife is often called a tomato or sandwich knife, but it’s so much more versatile than that description would imply. Of course, it works beautifully on most anything you would put in a sandwich—from meat to cheese to tomato slices. What’s more, the serrations will handily cut the sandwich in half when it’s done. But the Premier Serrated Utility offers something others don't. The blade edge is serrated at the front and back, but has a fine edge in the middle. This means that it's perfect for cutting foods with a tougher or more resilient exterior and a tender interior. For the initial push or pull cut, the serrations glide through the exterior with ease while the fine edge cuts through the softer interior. The combination of serrated and fine edge means you get the perfect slice no matter what you're cutting with no tearing or squashing.
8-in. Chef's Knife
Your chef’s knife will probably be the most-used knife in your kitchen. If you’re like most cooks, you’ll want to find the one that feels like an extension of your arm. The beautiful Shun Premier 8-in. Chef's Knife could be the one for you. This breathtaking knife is lightweight, agile, and offers an extremely comfortable grip. In fact, Shun Premier's thinner blades makes this chef’s knife lighter and less tiring to use than comparable European-style chef's knives. The 8-in. length and razor-sharp edge are perfect for slicing, dicing, and chopping a full range of fruits, vegetables, and other foods. The wide blade keeps knuckles off the cutting board and comes in extra handy when transferring cut food from board to pan. With its curved belly, the Chef's knife can be gently rocked through fresh herbs or spices to produce a very fine mince.
9-in. Bread Knife
If you bake or buy whole loaves of bread, a bread knife will be one of the most-used knives in your kitchen. Whether you love wonderfully crusty or delicately tender bread, the Shun Premier Bread Knife will be your loaf's new best friend, no matter what its texture. The key is Shun’s razor-sharp, wide, “low frequency” serrations. Unlike a plain-edged knife, the serrations let you gently saw through the bread without crushing and with much less crumbing. Unlike sawtooth serrations that are spaced closer together, the Shun Premier Bread Knife’s wide serrations will gently glide through the bread without tearing. This keeps the bread’s texture intact and enhances eating pleasure. Cakes and pastries also benefit from the Shun Premier Bread Knife’s smooth cutting capabilities.
9.5-in. Slicing Knife
The Shun Premier Slicing Knife can make food look delicious by enabling you to cut thin, even slices. But it can actually make food taste better, too. With the Shun Premier Slicing Knife’s longer length, narrower blade, and Shun-sharp edge you can make long, even slices without tearing or sawing. This kind of clean cut keeps more of the meat juices—and thus more of the flavor—inside the meat, rather than pooling on the cutting board. The Shun Premier Slicing Knife’s 9 ½-inch blade means you can cut slices with a single, long stroke. The narrow profile and razor-sharp Shun edge let the blade glide through the meat with less friction so each slice is perfect. Ideal for slicing a wide variety of meats, the Shun Premier Slicing Knife can also be used to cut larger vegetables.
