The Shun Premier 8-piece Professional Set is part of the beautiful Shun Premier line, which calls to mind the hand-forged knives of ancient Japan. While each knife still takes at least 100 handcrafted steps to complete, the materials Shun uses are among the most advanced in the industry. Each blade has a cutting core of Shun's proprietary VG-MAX “super steel” to take and hold a precision edge. The layered Damascus cladding supports the core and provides additional stain resistance. Near the edge of the blade, where the steels meet, an undulating line is formed—similar to the Hamon formed when samurai swords are tempered using a traditional clay-baking technique. The hammered tsuchime finish acts like a series of hollow-ground cavities to reduce drag. The handles nestle comfortably in the hand, while the embossed end cap adds balance and beauty.

8-in. Chef's Knife

The answer is honing with the Shun Classic Combination Honing Steel. It gently realigns the edge of the blade, prolonging the knife's sharpness. The Shun Classic Combination Honing Steel has two surfaces: a smooth one for day-to-day honing, and a micro-ribbed one for weekly honing.While fine European knives can require honing after each use, Shun's harder steel means you can hone just once a week or so, depending on your level of use. To make honing to the correct 16° Shun angle easier, the Shun Classic Combination Honing Steel has a built-in 16° angle on the handle. This attractive block is made of easy-to-clean, stain resistant bamboo. Durable bamboo is harder than maple, lighter than oak, and is one of the world's most renewable resources. Grown without chemicals or pesticides, bamboo matures rapidly and needs little water. It is ideal for kitchen accessories because it absorbs very little moisture and so doesn't shrink or swell like other hardwoods. To keep it clean, just wipe with a damp cloth.
