The Shun Premier 8-piece Professional Set is part of the beautiful Shun Premier line, which calls to mind the hand-forged knives of ancient Japan. While each knife still takes at least 100 handcrafted steps to complete, the materials Shun uses are among the most advanced in the industry. Each blade has a cutting core of Shun's proprietary VG-MAX “super steel” to take and hold a precision edge. The layered Damascus cladding supports the core and provides additional stain resistance. Near the edge of the blade, where the steels meet, an undulating line is formed—similar to the Hamon formed when samurai swords are tempered using a traditional clay-baking technique. The hammered tsuchime finish acts like a series of hollow-ground cavities to reduce drag. The handles nestle comfortably in the hand, while the embossed end cap adds balance and beauty.

8-in. Chef's Knife
Your chef’s knife will probably be the most-used knife in your kitchen. If you’re like most cooks, you’ll want to find the one that feels like an extension of your arm. 9-in. Bread
If you bake or buy whole loaves of bread, a bread knife will be one of the most-used knives in your kitchen. Whether you love wonderfully crusty or delicately tender bread, the Shun Premier Bread Knife will be your loaf's new best friend, no matter what its texture. The key is Shun’s razor-sharp, wide, “low frequency” serrations. Unlike a plain-edged knife, the serrations let you gently saw through the bread without crushing and with much less crumbing. Unlike sawtooth serrations that are spaced closer together, the Shun Premier Bread Knife’s wide serrations will gently glide through the bread without tearing. 9.5-inch Slicing

This kind of clean-cut keeps more of the meat juices—and thus more of the flavor—inside the meat, rather than pooling on the cutting board. The Shun Premier Slicing Knife’s 9 ½-inch blade means you can cut slices with a single, long stroke. The narrow profile and razor-sharp Shun edge let the blade glide through the meat with less friction so each slice is perfect. Ideal for slicing a wide variety of meats, the Shun Premier Slicing Knife can also be used to cut larger vegetables.
Combination Honing Steel
With each use of your knife, the razor-sharp edge naturally bends over just a tiny bit. The edge is still sharp, but the sharpest part isn’t making contact with the food. The answer is honing with the Shun Classic Combination Honing Steel. It gently realigns the edge of the blade, prolonging the knife's sharpness. The Shun Classic Combination Honing Steel has two surfaces: a smooth one for day-to-day honing, and a micro-ribbed one for weekly honing.While fine European knives can require honing after each use, Shun's harder steel means you can hone just once a week or so, depending on your level of use. To make honing to the correct 16° Shun angle easier, the Shun Classic Combination Honing Steel has a built-in 16° angle on the handle. The premium PakkaWood handle provides a secure grip and matches the handles of the rest of the beautiful Shun Classic line.

The Shun 11-Slot Bamboo Block is big enough to display a large Shun collection beautifully on your countertop. This handsome block includes slots for your honing steel, kitchen shears, and can even hold up to six steak knives. Everything stays within easy reach when you keep this block in your kitchen. This attractive block is made of easy-to-clean, stain resistant bamboo. Durable bamboo is harder than maple, lighter than oak, and is one of the world's most renewable resources. Grown without chemicals or pesticides, bamboo matures rapidly and needs little water. It is ideal for kitchen accessories because it absorbs very little moisture and so doesn't shrink or swell like other hardwoods. To keep it clean, just wipe with a damp cloth. The natural hardness of bamboo means it resists knife marks and retains its handsome appearance even under consistent use.
