Sora uses Shun's proprietary Composite Blade technology to bring together a VG10 san mai cutting edge with a Japanese 420J stainless steel upper. This technology puts high-performance material exactly where it's needed—on the edge. The two blade sections are laser cut, then fit together like pieces of a jigsaw puzzle. Braze welding permanently joins them. The attractive wavy pattern at the joint is based on traditional Japanese sword hamon lines. While Sora's blade shapes and handle design are traditional Japanese, the textured PP/TPE polymer blend handle material provides a contemporary look, secure grip and balance, and is easy to maintain.

3.5-in. Paring Knife
You can think of a paring knife as a smaller version of a chef's knife because, like the Sora Chef's Knife, the Sora Paring Knife is quite versatile. The paring knife gets its name from its main function—removing or “paring” away things like peels or pits from fruits and vegetables. It’s ideal for peeling, coring, trimming, decorating, and other detail work. Its small size gives you complete control over the tip and edge of the blade. Generally, you'll use this knife in your hand rather than against a cutting board, though paring knives can also be used for chopping small foods, such as garlic cloves or ginger.
6-in. Utility Knife
A utility knife is between a chef’s knife and a paring knife, but its blade is narrower and straighter. This makes it perfect for a multitude of small tasks where more precise cuts are needed, such as trimming broccoli, green beans, or other smaller vegetables. Some cooks like to use it in their hand, too—almost like a large paring knife. Others like its smaller size as an alternative to the chef’s knife. Utility knives are sometimes called sandwich knives because they work well on almost everything that goes into a sandwich—from thin-skinned vegetables such as tomatoes, to meats and cheeses.

This is the place to start your Shun Sora collection: the Sora Chef's Knife. Of course you know it's the essential kitchen knife. But what you might not know is that since the Sora line features traditional Japanese blade and handle shapes, in Japan, the Sora Chef's Knife would be called a gyuto. It's used for all the same purposes as a chef's knife—all-around food preparation. But the Sora Chef's has less curve than a Western chef's knife, which means it contacts the cutting board along more of its length, so more food is cut per slice. The Sora has a gentle roll off the tip compared to the large roll of a Western style knife, so the Sora needs to be lifted less, making cutting more efficient. Once you try the Sora Chef's Knife, you'll wonder what you ever did without it.
Herb Shears
The extra-fine 16° cutting edge cuts of our elegant Shun Herb Shears cuts cleanly and won't bruise delicate herbs. A built-in blade notch makes it easy to strip herbs or cut through their stems. The high-carbon, molybdenum-vanadium, stainless-steel blades offer extra-long life. The ergonomically designed grip is padded with elastomer plastic for maximum comfort and the shears are suitable for both left- and right-handed use. For easy cleaning, the blades separate. An interlock screw lets you adjust the blade tension to suit your preferences.

Combination Honing Steel
The Sora Combination Honing Steel is used to hone your knives, that is, to gently realign the cutting edge of your Shun cutlery. With each use of your knife, the edge naturally bends over just a tiny bit. The edge is still sharp, but the sharpest part isn’t making contact with the food. The answer is honing. It realigns the edge and prolongs the sharpness.
The Sora Combination Honing Steel has two surfaces: a smooth one for everyday honing, and a micro-ribbed one for weekly honing. It has a built-in angle on the handle, which makes it easy to hone your knives to the correct 16° Shun angle.
11-Slot Bamboo Block
11-Slot Bamboo Block displays your Shun collection beautifully and ensures the knife you need is always within easy reach. This attractive block is made of easy-to-clean, stain resistant bamboo. Durable bamboo is harder than maple, lighter than oak, and is one of the world’s most renewable resources. Grown without chemicals or pesticides, bamboo matures rapidly and needs little water. It is ideal for kitchen accessories because it absorbs very little moisture and so doesn’t shrink or swell like other hardwoods. All it requires to keep it clean is occasional wiping with a damp cloth. The natural hardness of bamboo means it resists knife marks and retains its handsome appearance even under consistent use. This block can accommodate up to 11 pieces of kitchen cutlery, including a honing steel and kitchen shears.
